Ingredients
- 4 boneless, skinless chicken breasts, browned and cubed
- 3 cups frozen Italian-style vegetables
- 1 small onion, chopped
- 1/2 t garlic powder
- 1 T mixed Italian herbs
- 4 cups penne
- 2 jars pasta sauce
- 1 small jar dried tomato pesto
- 1/2 cup chopped green peppers
- 1 T Emeril’s seasoning
- chicken broth
- 1 cup shredded mozzarella cheese
- hot sauce, to taste (optional)
Preparation

Method:
Place the rack in a 5 qt. pressure cooker, or larger. Add vegetables, garlic, herbs, pasta, sauce, pesto and enough chicken broth to barely cover. Stir well.
Place chicken on top and push under the mixture until just covered. Add hot sauce, if desired.
Lock the lid in place.
Cook for 10 minutes and immediately release the pressure.
Remove the lid, stir the cheese into the pot. Adjust seasonings to taste and serve.
