Thai Chicken

Ingredients

  • 1 pound skinless boneless chicken breasts
  • 3/4 cup salsa
  • 1/4 cup lowfat peanut butter
  • 2 tablespoons lime juice
  • 1 tablespoon soy sauce
  • 1 teaspoon ginger root, minced
  • 1/4 cup chopped peanuts, optional
  • 2 tablespoons cilantro
  • cayenne

Preparation

Step 1

1. Place chicken in crockpot.

2. Mix salsa-peanuts. Add cayenne to taste. Pour over chicken. Cook 4 hours on low. Garnish with cilantro.

Notes: Could cut down on peanut butter a smidge, peanuts not necessary but might be a good garnish. Really good!
