Vegetable Kugel

Ingredients

  • 2 c shredded or grated raw sweet potatoes
  • 2 c shredded or grated raw carrots
  • 2 c shredded or grated raw apple
  • 2 c matzo meal
  • 2 t cinnamon
  • 2 t nutmeg
  • 1/2 c sweetener of choice
  • 1/2 t salt
  • 1 c vegan or regular margarine melted

Preparation

Step 1

Preheat to 325°. Lightly grease a rectangular 9 x 12 baking dish. Combine sweet potatoes, carrots and apple in a large bowl. Add matzo meal, spices, sweetener and salt, mix well. Stir in margarine until well combined. Spread mixture in a baking dish—smooth the top. Cover dish tightly with aluminum foil. Bake for 45 min, remove foil and bake uncovered for 15 minutes. Allow to cool before cutting.
