Ingredients

  • 2 tsp extra virgin olive oil
  • 1 1/2 c. minced onion
  • 2 lb grnd beef
  • 1 tsp chili pwdr
  • 1 tsp grnd cumin
  • 1 tsp salt
  • 2 x cloves garlic chopped
  • 1 can tomato sauce (15 ounce.)
  • 1 c. sliced black olives
  • 8 x flour tortillas
  • 4 c. shredded Cheddar cheese
  • Lowfat sour cream, salsa and minced green onion optional

Preparation

Step 1

Heat oil in large skillet over medium heat. Add in onions and cook till tender. Add in grnd beef, chili pwdr, cumin, salt and garlic; cook till browned. Stir in tomato sauce; heat through. Stir in black olives. Make foil handles using three 18x2" strips of heavy foil. Crisscross foil to create spoke design. Place in slow cooker. Lay one tortilla on foil strips. Spread with meat sauce and layer of cheese. Top with another tortilla, meat sauce and cheese. Repeat layers ending with cheese. Cover and cook on High 1-1/2 hours. To serve, lift out of slow cooker using foil handles and transfer to serving platter. Throw away foil. Cut into wedges. Serve with lowfat sour cream, salsa and minced green onion, if you like.
Makes 4-5 servings.
