Ingredients
- 1/2 cup unsalted butter
- 1/4 cup sugar
- 5 tbsp baking cocoa
- 1 egg, beaten
- 1 1/4 cup graham cracker crumbs
- 1/2 cup pecans, finely chopped
- 1/4 cuphazelnuts, finely chopped
- 1/2 cup unsalted butter, melted and cooled slightly
- 2/3 cup powdered sugar
- 1 cup creamy peanut butter
- 1 tsp vanilla
- 5 oz semi-sweet chocolate chips
- 1 tbsp butter
- Pink Himalayan salt
Preparation
Step 1
1. Melt the butter, sugar and cocoa over simmering water in a double boiler; add egg and beat to combine(will thicken quite a bit at this point). Remove from heat and add graham cracker crumbs and nuts.
2. Press mixture into an 8x8" baking pan; set aside.
Add peanut butter and butter in a small bowl and mix in powdered sugar and vanilla to form a thick paste. Pour over the base layer and smooth down to make a flat even layer.
3. Melt chocolate chips and remaining butter in microwave at 30 sec intervals stirring until melted and smooth. Pour chocolate mixture over peanut butter mixture and spread evenly.
4. Cool in fridge for about 5 mins. It will be soft on top but not warm. Sprinkle lightly with the Pink salt. Place in fridge or the freezer and let cool completely to become set. Cut into small pieces.
