White Chocolate Cheesecake

Ingredients

  • 12 ounces white chocolate
  • 1-1/4 cup pound cake crumbs
  • 24 ounces cream cheese
  • 1 cup sugar
  • 1-1/2 teaspoons vanilla
  • 1 tablespoon apricot brandy
  • 1 cups sour cream

Preparation

Step 1

1. Melt the white chocolate by putting it in the top of a double boiler; making sure the water in the bottom pan is just simmering; stir occasionally.
2. Preheat oven to 350 degrees F.
3. Distribute pound cake crumbs evenly over bottom of a 9" springform pan; pressing down lightly; set aside.
4. In a large bowl, combine cream cheese, sugar, vanilla and brandy with an electric mixer for 5 minutes, or until very smooth.
5. Add melted white chocolate and blend another 5 minutes.
6. Add sour cream and mix to combine.
7. Pour mixture into crumb lined pan and bake for 30 minutes.
8. Chill overnight.
