Savory Pot Roast

A chuck roast with a sweet and tangy taste and the juices make a great gravy to go with it.

Ingredients

  • Gravy:
  • 1 T oil
  • 4 to 5 lb chuck roast
  • 1 T seasoned salt
  • l c celery sliced
  • 1 c carrots sliced
  • 1 1/2 c onions slice
  • 1-141/2 oz chunky stewed tomatoes with Italian spices
  • 1/4 c red wine vinegar
  • 1 small bay leaf
  • 1/2 teas thyme
  • 1/4 c water
  • 2 T flour
  • 1 teas Worcestershire sauce

Preparation

Step 1

Sprinkle both sides of the roast with seasoned salt. Put in frying pan and brown both sides. Put browned roast in a roasting pan and top with celery, carrots, onions, tomatoes with juice, vinegar, thyme and bay leaf. Cover and cook at 350 for 2 1/2 to 3 hours.
Remove meat and veggies. Put reserved juices in a saucepan. Whisk together gravy ingredients and add to saucepan and stir constantly until gravy thickens.
Serve meat with veggies and gravy on the side.
