Salmon with Parmesan-Herb Crust

Ingredients

  • 4 (6 oz) salmon fillets
  • 1/4 tsp salt
  • 1 Tbsp fresh lime juice
  • 1 tsp olive oil
  • 1/2 c fine, dry breadcrumbs
  • 1/2 c shredded Parmesan cheese
  • 2 Tbsp melted butter
  • 1-1/2 tsp salt-free tomato-basil seasoning blend

Preparation

Step 1

Preheat oven to 375º. Sprinkle salmon with salt.

Place salmon on a lightly greased aluminum foil-lined 15x10 inch jelly roll pan; pour lime juice and olive oil over salmon.

Stir together breadcrumbs, Parmesan cheese and butter; spread over salmon.

Bake for 20 minutes or just to desired degree of doneness.

Serve immediately.
