Whipped Cream

  • 1 1/2 cups very cold heavy cream
  • 2-8 Tbs powdered sugar, depending on how sweet you like it
  • 1 tsp vanilla

Working with a stand mixer fitted with the whisk attachment or with a hand mixer in a large bowl, beat the cream and sugar together just until the cream starts to thicken. Start beating cream slowly-don't rush the process- and increase the speed as the cream gains texture. Continue to beat until the cream reaches your desired consistency. Be certain not to overbeat. When cream is overbeaten, it becomes very thick and looks as if it's on the verge of separating; seriously overbeaten cream turns into butter. When cream is almost to your desired texture, stir in the vanilla.
