Black Forest Frozen Yogurt with Chocolate & Cherries

Just like the cake, Black Forest here indicates cherries and chocolate. The combination creates a smashing flavor that makes a hedonistic frozen yogurt.

Ingredients
- 3/4 pound (12 ounces or 350 grams) fresh sweet cherries or 1 1/2 cups frozen unsweetened Bing cherries, thawed
- 2/3 cup sugar
- 3 cups vanilla-flavored yogurt
- 1 Tablespoon fresh lemon juice
- 1/4 teaspoon almond extract
- 3 ounces (75 grams) bittersweet or semisweet chocolate chunkis, coarsely chopped and chilled

If using fresh cherries, remove any stems. Rinse well and pat dry with paper towels. Working over a bowl to catch the juices, cut the cherries in half with a small, sharp stainless steel knife. Cut out the pit with the tip of the knife and drop the cherries into the bowl.
Add the sugar to the cherries and toss to mix well. Stir in the yogurt, lemon juice, and almond extract. Stir to dissolve the sugar. If you have time, cover and refrigerate for 1 or 2 hours to allow the flavors to develop.
Pour the yogurt base into the canister of an ice cream maker and freeze according to the manufacturer's directions. Add the chocolate and process for 1 minute longer, or until incorporated. Transfer the frozen yogurt to a covered container and freeze until it is firm enough to scoop, at least 4 hours or overnight.
