Lentil Sausage Soup

Ingredients

  • 1 lb green lentils
  • 1/4 cup olive oil
  • 4 cups diced onions
  • 4 cups diced leeks
  • 1 tblsp minced garlic
  • 1 tablsp salt
  • 1 1/2 tsp pepper
  • 1 tblsp thyme
  • 1 tsp cumin
  • 3 cups chopped celery
  • 3 cups diced carrots
  • 3 qts chicken stock
  • 1/4 cup tomato paste
  • 1 lb kielbasa, cut up
  • 2 tblsp red wine

Preparation

Step 1

In a large saucepan cover the lentils and boiling water and allow to sit for 15 minutes. Drain. Then in the olive oil sauté the veg, the salt and pepper, thyme, and cumin. Cook for about ten minutes. Add chicken broth, tomato paste, and the drained lentils. Cover and bring to a boil. Reduce heat and simmer for one hour or until the lentils are tender. Add the sausage and wine. Serve with drizzles olive oil and parmesan .
