Ingredients

  • 1 Lg can Yams
  • 1 Sm can Apricot Halves
  • 1 1/4 c Brown Sugar
  • 1/2 t Cornstarch
  • 1/4 t Salt
  • 1/8 t Cinnamon
  • 2 T Butter
  • 1 t Orange Peel
  • 1/2 c Pecan halves

Preparation

Step 1

Place potatoes in greased baking dish.

In small saucepan, combine sugar, cornstarch, salt, cinnamon and orange peel.

Measure 1 c apricot syrup, add to saucepan. Bring to a boil, boil 2 minutes.

Add apricots, butter, and pecans. Cook to melt butter and soften apricots.

Pour over potatoes, bake 375 deg 25 mins.
