Ingredients

  • 1 bunch leek
  • 3 tbl olive oil
  • 3 - 3 1/2 lamb shank
  • 4 - 5 cloves garlic (sliced)
  • 8- 10 baby carrots
  • 2 tsp chopped fresh rosemary
  • salt, pepper
  • 1/4 cup dry white wine

Step 1

cut the roots from leeks. discard tough outer leaves. cut leek in 1/2 lenghtwise. Slice leeks crosswise into 1/2 inch pieces. Set aside. Heat oil in dutch oven. Add shanks & cook 10 - 12 min until brown. Transfer meat to plate. Reduce heat to medium low. Add garlic & saute 3 to 4 mins/ Add leeks & saute 6 -8 min. Add carrots. Return shanks topan. Add rosemary, salt, pepper & wine. Increase to med high. Bring to boil. Reduce heat to low. cover & simmer 2 to 2 1/2 hrs
