Jim's Baked Beans

Ingredients

  • 2 lbs. dried Great Northern Beans
  • 1 large onion, chopped
  • 1 small bottle ketchup
  • 1 small bottle bbq sauce
  • 1/2 cup brown sugar
  • 1/2 cup maple syrup
  • 2 T cider vinegar
  • 2 T dry mustard
  • 1/4 cup molasses
  • 1 lb bacon, finely sliced
  • 1/4 cup rum (or cognac)
  • 1 clove garlic, minced
  • 1/2 t dried thyme
  • water or chicken stock to cover

Preparation

Step 1

Soak beans overnight

Drain beans and put in pressure cooker pot.
Add all ingredients to beans.
Add water/broth to just cover the conents of the pot.

Pressure cook on HIGH for 45 minutes. Allow a natural release. Beans will thicken as they cool. Best served the next day.
