Ingredients
- 2 medium sweet potatoes
- 1 tbsp olive oil
- 1/4 tsp salt and fresh pepper

Step 1
Preheat oven to 425F. Peel 2 medium sweet potatoes and slice into 1/2-in. rounds. Place on a baking sheet. Toss with 1 tbsp olive oil, 1/4 tsp salt and fresh pepper until coated. Roast, flipping halfway through, until caramelized, 25 to 30 min.
