Ingredients

  • Graham Cracker Crust:
  • 6.5 ounces gluten free graham crackers ( Kinnikinnick brand)
  • 1/2 cup melted coconut oil
  • 2 tbs sugar
  • 1/4 tsp nutmeg
  • 1 tsp cinnamon
  • Filling:
  • 2 tbs ground flax seed & 6 tbs water mixed together
  • 16 oz pumpkin
  • 3/4 cup sugar
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp ginger
  • 1/8 tsp cloves
  • 1 cup full fat coconut milk.
  • 1/4 cup gluten free flour.

Details

Preparation

Step 1

Crust:
Preheat oven to 375.
Use food processor to get the crumbs.
Combine all ingredients and press into 9" pie pan.
Bake crust for about 8 minutes until edges brown.

Filling:
Preheat to 425.
Mix ingredients together and pour into crust.
Bake for 15 minutes.
Reduce temp to 350 and bake for about 45 minutes longer
or until knife comes out clean.
