Cauliflower Pizza (Vegan/Gluten Free)

Ingredients

  • Crust:
  • 1/3 heat cauliflower, riced (you can use food processor) and wrung dry
  • 2 flax "eggs"
  • 1/4 cup almond flour
  • 1/4 tsp salt
  • pinch of garlic powder
  • Toppings:
  • 1/2 onion sliced
  • 1 zucchini sliced thin
  • 5 shitake mushrooms sliced
  • 3 cloves of garlic
  • 3/4 tsp basil and oregano
  • 1 tomato sliced thin

Preparation

Step 1

Preheat oven to 400 degrees.

Combine cauliflower, flour, salt, eggs, and garlic powder.
Put cauliflower mixture between two sheets of parchment
paper and press it as thin as you can. Bake between the
parchment paper for 20 minutes.

Saute onions in EVOO with salt, pepper and spices until soft.
Add zucchini and cook for 2 minutes. Add mushrooms and garlic
and cook for 2 minutes.

Take the crust and spray with EVOO and top with veggie mixture.
Place tomato slices on top and bake for 15 minutes at 350 degrees.
