Banana Bread (Vegan/Gluten Free)
- 4 eggs (I substitute 1 tbs flax and 3 tbs water for each egg)
- 5 ripe bananas mashed
- 1/4 cup sugar
- 1/4 coconut sugar
- 1/2 unsweetened applesauce
- 1 tsp vanilla
- 1 1/2 cups brown rice flour
- 1/2 cup oat flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/3 cup melted coconut oil
- 1/2 cup raisins
Preheat oven to 350.
Beat eggs lightly. Add bananas, sugar, applesauce, and
vanilla and mix thoroughly.
Add wet mixture to mixture of flours, salt and baking soda.
Mix until just combined. Fold in oil and raisins.
Pour batter into two greases loaf pans.
Bake for 45 minutes or until toothpick comes out clean.
