Ham Jambalaya


Great meal for leftover ham

  • 1 onion, diced
  • 1 green pepper, diced
  • 1 T. canola oil
  • 1 c. cubed hm
  • 1 14oz. can tomato sauce
  • 1/2 rind lemon, chopped fine
  • 1 bay leaf
  • 2 dashes Tobasco sauce
  • 3/4 c. rice



Step 1

In large saucepan over medium heat, brown onion and green pepper in oil until softened, about 4 minutes.

Add ham, tomato sauce, lemon, bay leaf and Tobasco.

Cook, covered, at low temperature for 2 hours, adding water if needed.

While ham mixture is cooking, cook the rice.

Add rice to ham mixture after 2 hours and serve.
