Ingredients
- 1 red onion.wedges
- 1 red pepper,cut in pieces
- 1 green pepper, cut in pieces
- 2 jalepano peppers, seeded and cut in pieces
- 3 tomatoes,diced
- 2 mangoes,diced
- 1 lemon or lime, juiced
- 3 tsp chipolte seasoning
- salt and pepper to tase
- 1 can refried black beans
- 1 egg
- 1/2 cup oatmeal
- 6 slices cheese (opt)
- 6 buns
Preparation
Step 1
In food processor, place green pepprs, redpepper, onion and jalepanno peppers in bowl. Lightly pulse until diced (not Pulverized). Take out 3/4 cup of vegetable and put aside for burgers. Combine remaining ingredients with mango, tomatoes, lemon juice and 1 tsp. chipolte seasoning. CHILL.
For Burgers. Combine refried black beans, reserved pepper mixture, egg and oatmeal and 2 tsp chipolte seasoning. Chil 20 minutes. Form into patties on parchment lined cookie sheet and freeze until firm.
Bake 45 minutes in 350 degree oven. Place on foil lined grill and top with slice of cheese. Melt cheese. Brown buns. Assemble burgers and top with chilled salsa.
