Ingredients

  • 1 c. white quinoa
  • 2 c. water
  • 1/4 tsp salt
  • 1/2 c. pumpkin
  • 1/4 c. packed brown sugar
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground ginger
  • 1/8 tsp ground nutmeg
  • 4 tbsp low-fat vanilla yogurt, divided
  • 4 tbsp chopped pecans, divided
  • 4 tbsp dried cranberries, divided

Preparation

Step 1

Prepare white quinoa with water and salt as directed. While still warm, stir in pumpkin, brown sugar, cinnamon, ginger and nutmeg. Top each serving with 1 tablespoon each yogurt, pecans and cranberries.
