Ingredients
- 1 c. white quinoa
- 2 c. water
- 1/4 tsp salt
- 1/2 c. pumpkin
- 1/4 c. packed brown sugar
- 1/2 tsp ground cinnamon
- 1/4 tsp ground ginger
- 1/8 tsp ground nutmeg
- 4 tbsp low-fat vanilla yogurt, divided
- 4 tbsp chopped pecans, divided
- 4 tbsp dried cranberries, divided

Preparation
Step 1
Prepare white quinoa with water and salt as directed. While still warm, stir in pumpkin, brown sugar, cinnamon, ginger and nutmeg. Top each serving with 1 tablespoon each yogurt, pecans and cranberries.
