Strawberry Pie- Mom's

This pie crust is made from vegetable oil which makes it oily....but still flaky. It's a childhood favorite so I still follow the same directions for the crust vs using shortening.

Ingredients

  • For the pie:
  • 1 Qt. strawberries (Crush 1/2 with a fork)
  • 3 T. cornstarch
  • 1 C. sugar
  • 2 T. lemon juice
  • For the crust:
  • 1 1/3 C. flour
  • 1/2 t. salt
  • 1/3 C. salad oil
  • 2 T. cold H2O

Preparation

Step 1

Make the pie crust...poke holes in the crust with a fork...bake at 450 degrees for 12 minutes.

For the filling:

Place half of the strawberries (that are mashed with a fork) in a large saucepan along with the cornstarch, sugar, and lemon juice. Cook over medium heat until clear and thick. Let it cool, then place the additional sliced strawberries into the mixture.

Fold the pie filling into the cooled crust...serve chilled.
