Ingredients
- 1 egg, lightly beaten
- 1/2 cup mayo
- 1 T. Dijon mustard
- 1 lb. cooked salad shrimp, thawed and patted dry
- 4 green onions, chopped
- 1 (8.75 oz.) can whole kernel corn, drained & patted dry
- 1/4 cup chopped celery
- 1/4 cup chopped red pepper
- 2 T. capers, drained & minced
- 1 T. minced fresh cilantro
- 2 garlic cloves, minced
- 1 t. chili powder1/4 t. pepper
- 5 dozen mini phyllo tart shells
- 1/2 small green pepper, cut in small strips

Step 1
In small bowl, combine egg, mayo & mustard. Stir in shrimp, onions, corn, celery, red pepper, capers, cilantro, garlic, chili powder & pepper. Spoon ~ 2t. filling into each shell. Place on baking sheets, bake at 350 for 7-10 min. until tops begin to brown. Top with green pepper strips. Serve warm.
