Basic Brine

Ingredients

  • 6 qts. very cold water
  • 3/4 cup kosher salt
  • 3/4 cup sugar or honey

Preparation

Step 1

Dissolve sugar, if using, in an extra 1 cup hot water. Mix everything together in a large stockpot or bowl.

Add meat, cover and refrigerate 1 to 6 hours. The longer it brines, the saltier it will be.

Discard brine, pat meat dry, brush with oil and season with ground black pepper. Grill until cooked through.
