Sweet Potato Latkes

These sweet potato latkes with cranberry compote and sour cream will be the perfect addition to your Thanksgivukkah menu.

Ingredients
- 2 medium sweet potatoes
- 1/2 cup(s) Spanish onion
- 3 cup(s) whole eggs
- 1/2 teaspoon(s) cinnamon
- 1.50 tablespoon(s) brown sugar
- 1/2 cup(s) matzo meal
- 1/4 cup(s) vegetable oil for frying
Preparation
Step 1
Shred the sweet potatoes and the onion. Rinse the shredded potatoes under cold water in a colander. Place a cheesecloth over the potatoes, and squeeze to release as much liquid as possible. Discard the liquid.
In a large bowl, combine the sweet potatoes, onions, eggs, sugar, matzo meal, and cinnamon. Gently mix together by hand.
Heat oil in a large heavy skillet to 375 degrees F. Scoop 3 and 1/2 spoonfuls from the mixture and drop into the hot oil. Fry them for bout 2-3 minutes on each side until golden brown. Dry them in a pepper towel or resting rack.
