Cranberry Cornbread Stuffing
- 1 box Trader Joe's Cornbread Stuffing Mix
- 1/4 cup garlic olive oil
- 1 container stuffing starter mix
- 1 package sliced mushrooms
- 1 liter turkey broth
- 1 stick unsalted butter
- 1 cup fresh cranberries
- salt and pepper to taste
Preheat the oven to 350 degrees.
Combine broth, stuffing seasoning mix (if separate), and butter in a saucepan. Bring to a boil for 3-5 minutes.
Place cornbread in a large bowl. Pour broth mixture over the bread and stir.
Heat oil in a pan and saute stuffing starter, mushrooms and cranberries until tender. Season to taste with salt and pepper.
Combine all ingredients in a greased casserole pan and bake for 30-40 minutes.
