A store bought pastry crust makes quick work of this quiche with zucchini, cheese and bacon... yes bacon! The perfect quiche for breakfast or brunch.

Ingredients

  • Pastry for single crust
  • 10 large eggs
  • 2 cups crème fraiche
  • 2 cups whole milk
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • 2 tablespoons fresh thyme, finely chopped
  • 5 slices bacon, cut in 1/4-inch pieces
  • 2 small or 1 medium zucchini, peeked lengthwise into 1/8-inch thick ribbons
  • 1/2 cup gruyere

Step 1

Fit pastry into bottom & up sides of 10-inch tart pan with removable bottom. Cover with plastic and chill 20 minutes.

Preheat oven 375°F. Line tart dough with parchment, fill with pie weights and bake for 25 minutes until light brown. Cool completely.

In an electric mixer bowl with whisk , mix 1 egg and flour on high until smooth. Add remaining eggs and beat until smooth.

Place crème fraiche in medium bowl and whisk until smooth. Add milk and continue to whisk until well combined. Add to mixer along with salt, pepper and thyme. Mix until well combined. Place bacon, zucchini and cheese in tart shell. Pour egg mixture over top to fill shell. Bake 20 minutes, reduce temperature to 325°F and bake 40 to 50 minutes more until center is set. Cool for 20 minutes.

To reheat cover with foil and place in 325°F for 15 minutes.
