Ingredients

  • 15 large mushrooms
  • 3 T. butter
  • 1/4 cup thinly sliced green onion
  • 1 garlic clove
  • 3/4 cup finely chopped cooked chis (~4 oz.)
  • 2 T. bread crumbs
  • 2 T. grated Parmesan
  • 2 T. finely chopped smoke flavored almonds
  • 2 T. chopped golden raisins
  • 1 T. snipped fresh parsley
  • olive oil

Step 1

Preheat oven 425. Remove mushroom stems.
In small saucepan melt butter over medium heat. Add green onions and garlic, cook & stir ~ 2 min. until tender. Remove from heat. Stir in chix, crumbs, cheese, almonds, raisins & parsley. Set aside.
Place mushrooms, stem down in 15x10 pan and bake 5 min. Turn stem side up and brush with oil. Divide filing among mushrooms and bake 8-10 min. more until heated through.
