IHOP Buttermilk Pancakes

Even though the early press runs of the first book, Top Secret Recipes, excluded buttermilk in this recipe - a very I'mportant ingredient if you really want pourable batter - many figured out the missing ingredient on their own and the error was quickly corrected in later copies. Now we just like to call those copies of the book the "Collectors Editions." For any of you who were lucky enough to get one of the "Collectors Editions" wed liked to say "Congratulations!" Now heres the recipe, in its entirety, to make pancakes just like those served every day at IHOP. By Todd Wilbur
Ingredients
- Nonstick Cooking Spray
- 1 1/4 cups all-purpose flour
- 1 egg
- 1 1/4 cups buttermilk
- 1/4 cup granulated sugar
- 1 heaping teaspoon baking powder
- 1 teaspoon baking soda
- 1/4 cup cooking oil
- 1 pinch of salt
Preparation
Step 1
1. Preheat a skillet over medium heat. Use a pan with a nonstick surface or apply a little nonstick spray.
2. In a blender or with a mixer, combine all of the remaining ingredients until smooth.
3. Laddle approximately 1/3 cup of the batter into the hot skillet, forming 5-inch circles.
4. When the edges appear to harden, after a minute or two, flip the pancakes. They should be golden brown.
5. Cook pancakes on the other side for same amount of time, until golden brown. Makes 8 to 10 pancakes.

Yummy!! They taste nothing like IHOP's pancakes, but I think that they were better! I added a tad more sugar, and they were perfect. I've looked for a fluffy pancake recipe for so long, and I've never found one that doesn't turn out dense. These were fluffy for sure!!! I'll be making these again soon. Thanks!

Made these this morning...very good! Very light and fluffy. Not quite like IHOP's pancakes, but I think these are better! Will be making these again!
These aren't bad but they have a wierd aftertaste. Everybody needs to stop claiming to have 'Ihop' pancakes. These are ok; if you drench them in syrup its make them better. Unless you actually know what goes into Ihop pancakes I don't think you can claim these to be anywhere near as good.
This is the only IHOP recipe I have tried. This recipe is delicious and it has became a family favorite.
I haven't tried any of the other Ihop Copy Cats but this one sure was good. The only thing I would note is that I made smallish pancakes and ended up with about 10 pancakes which, in our family, is no more that 5 servings rather than 8. I ended up having to whip up a new batch of batter in the middle of fixing my big Sunday breakfast. However, it took no time at all to make so it wasn't the end of the world.
Perfect buttermilk pancake recipe, and really not all that unhealthy with the oil instead of butter. Thanks for posting.
