Ingredients

  • 1/4 cup olive oil
  • 1 garlic clove, minced
  • 1/2 very finely diced onion
  • 2 large eggs
  • 3/4 lb. feta, drained & crumbled
  • 1/2 cup very finely chopped parsley
  • 1 t. dill or 2 T. fresh chopped dill
  • 3 (10 oz.) packs. frozen chopped spinach, thawed and squeezed dry
  • 2 boxes phyllo dough
  • 1 lb. butter, melted

Preparation

Step 1

preheat oven 375. Heat oil in small pan. Add onion & garlic and cook until golden/ Beat eggs in large bowl until light & lemony colored, Stir cooked onion, garlic, feta, parsley, dill and spinach together. Season with salt & pepper.
Make triangles, using 3 sheets of dough, cut into sixth's. Brush with melted butter. Can be frozen.
Bake 20 min until golden.
