Ingredients

  • 1 lb. ground beef or pork
  • 1 medium onion, finely diced
  • 1 jalapeno, minced
  • 1/4 t. chili powder
  • 1 can ( 14.5 oz.) diced tomatoes
  • salt & pepper
  • 1/2 chopped fresh cilantro
  • DOUGH
  • 5 cups flour
  • 2.5 t. baking powder
  • 2.5 t. salt
  • 5 T. butter cut into small pieces
  • 1.25 cups cold water
  • 1 large egg, lightly beaten with 1 T. water

Step 1

Filling
In large skillet over medium high heat, cook meat, breaking into small pieces. Add onion & jalapeno, cook until soft. Stir in chili powder & tomatoes. Cook over medium until thickened 12-15 min. Season with salt & pepper. Stir in cilantro.

DOUGH
In bowl combine flour, baking powder & salt. Cut in butter until crumbly. Add just enough water so dough comes together.

Empanadas can be frozen raw.
Bake at 400 on parchment lined sheets. Brush tops with egg wash. Bake 30-40 min. until golden.
