Mashed Red Potatoes

Mashed potatoes are pretty much a requirement on the Thanksgiving table. These ones, cooked with onion, are particularly divine.

Ingredients
- 3 lb. red-skinned potatoes, cubed
- 1 medium onion, diced
- 1 cup half-and-half, warmed
- 4 Tbsp. unsalted butter, melted
- 2 Tbsp. minced fresh chives
- Salt and white pepper to taste

Step 1
Cook potatoes and onion in a pot of boiling salted water until potatoes are fork-tender, 12–15 minutes. Drain potatoes and onion; return to the pot over medium heat and cook, stirring often, to remove excess moisture, 1 minute.
Stir in half-and-half and butter, then beat mixture with a hand mixer on low speed until smooth. Stir in chives and season potatoes with salt and pepper.
