Ingredients

    lb. red-skinned potatoes, cubed

  • 1

    medium onion, diced

  • 1

    cup half-and-half, warmed

  • 4

    Tbsp. unsalted butter, melted

  • 2

    Tbsp. minced fresh chives

  • Salt and white pepper to taste

Directions

Cook potatoes and onion in a pot of boiling salted water until potatoes are fork-tender, 12–15 minutes. Drain potatoes and onion; return to the pot over medium heat and cook, stirring often, to remove excess moisture, 1 minute. Stir in half-and-half and butter, then beat mixture with a hand mixer on low speed until smooth.
