Sumptuous Salmon Salad

  • Dressing:
  • 1 lb asparagus, cooked and diced
  • 1 lb potatoes, cooked and diced
  • 2 cups fresh or frozen corn niblets
  • 2 tomatoes, seeded and diced
  • 4 cups chopped ruby-tipped lettuce
  • 1/2 cup chopped fresh basil or parsley
  • 6 green onions, diced
  • 2 cans salmon, well drained and broken into chunks
  • 1 garlic clove, minced
  • salt to taste
  • 1/2 tsp pepper
  • 1/4 cup red wine vinegar
  • 1/4 cup olive oil



Step 1

Combine the asparagus, potatoes, corn and tomatoes in a large mixing bowl. Add the lettuce and herbs and toss well. Add chunks of salmon but do not toss together yet. Combine garlic, salt, pepper and vinegar for the dressing. Whisk in olive oil. Combine dressing gently with salad. Taste and adjust seasoning if necessary. Serve in a large bowl or mound on a plate to serve.
