Maine Blueberry Muffins

  • 1/2 cup butter, softened
  • 1 up sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1/2 cup milk
  • 2 cups flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 2 cups fresh blueberries

Step 1

With an electric mixer, cream butter and sugar.

Beat in eggs, vanilla and milk

In a separate bowl, sift together flour, baking powder, salt and cinnamon.

Stir the egg mixture into the flour mixture by hand, until all ingredients are moist.

Fold in blueberries by hand.

Fill buttered or paper-lined muffin tins quite full. Sprinkle the top of each with a little sugar.

Bake in a preheated oven at 375 degrees for 28 minutes or until tops are golden brown.

Remove pans from oven, cool a few minutes before removing muffins, and serve hot with butter.
