Mushroom Crust Quiche

Ingredients

  • 1/2 lb mushrooms, chopped
  • 3/4 c. saltine crackers, crushed
  • 3/4 - 1 c. green onions, chopped
  • 5 T. butter or margarine
  • 2 c. Swiss cheese or Monterrey Jack, shredded
  • 1 c. cottage cheese
  • 1 egg
  • 1/2 T. basil
  • 1/4 t. cayenne
  • 1/8 t. paprika

Preparation

Step 1

Process mushrooms & brown them in 3 T. butter.
Add the crackers.
Press the mixture into a quiche pan.
Saute' green onions in 2 T butter & sprinkle them over crust.
Grate the cheese & sprinkle over onion layer.
Process cottage cheese, egg, & spices until smooth.
Pour over cheese layer.
Bake 350 for 35 minutes.
Let stand 10-15 minutes before serving.
