Ingredients
- 3 lb. red-skinned potatoes, cubed3 lb.
- 1 medium onion, diced1
- 1 cup half-and-half, warmed1 cup
- 4 Tbsp. unsalted butter, melted4 Tbsp.
- 2 Tbsp. minced fresh chives2 Tbsp.
- Salt and white pepper to taste
Preparation
Step 1
Cook potatoes and onion in a pot of boiling salted water until potatoes are fork-tender, 12–15 minutes. Drain potatoes and onion; return to the pot over medium heat and cook, stirring often, to remove excess moisture, 1 minute.
Stir in half-and-half and butter, then beat mixture with a hand mixer on low speed until smooth. Stir in chives and season potatoes with salt and pepper.
