Cajun Spiced Grilled Salmon

Ingredients
- 1 - 6 oz Salmon Fillet per person
- 2 tbsp Paprika
- 2 tbsp Cayenne Pepper
- 1 tbsp fresh ground black peppercorns
- 2 cloves of Garlic, crushed (or Garlic Powder)
- 3 tbsp onion flakes
- 2 tbsp dried oregano or marjoram
- Olive Oil

Preparation
Step 1
1. Mix all the dry ingredients except the Oil together with a mortar and pestle until powdery.
2. Rub all over the salmon fillets on both sides and leave for 1 - 2 hours.
3. Heat a BBQ until hot.
4. Spread some oil over the salmon fillets and place on the grill flesh side down.
5. Cook for 5 minutes.
6. Turn over and cook until done. (Test by poking a knife into the center of the salmon fillet and look inside, the fish should flake easily.)
