Jon's Favorite Sweet Potato Casserole with Marshmallows

Ingredients

  • 2 pounds sweet potatoes
  • 1/2 c sugar
  • 1/4 c butter, melted
  • 1/4 c milk
  • 2 eggs, lightly beaten
  • 1 tsp vanilla
  • 1 c tiny marshmallows
  • 1/2 c chopped pecans
  • Pure maple syrup (optional)

Preparation

Step 1

1. Preheat oven to 350 degrees. Wash and peel sweet potatoes, cut off woody portions. Cube sweet potatoes in large cubes. In a covered saucepan, cook sweet potatoes in enough lightly salted boiling water to cover for 25 to 30 minutes until tender. Drain.

2. Transfer sweet potatoes to a large bowl. Mash lightly. Stir in sugar, melted butter, milk, eggs and vanilla. Transfer sweet potato mixture to a 2-quart baking dish.

3. Bake 15 minutes. Sprinkle with marshmallows and chopped pecans and if desired, drizzle lightly with maple syrup. Bake for 15 to 20 minutes more or until hot and bubbly and marshmallows are golden.

TO MAKE AHEAD: Prepare as directed through Step 2. Cover and chill for up to 24 hours. Bake, covered, for 10 minutes. Uncover, bake for 15 minutes. Sprinkle with marshmallows and pecans, and, if desired, drizzle with maple syrup. Bake for 15 to 20 minutes more or until casserole is bubbly and marshmallows are golden.
