Ingredients

  • 3 T. oil
  • 1 large onion, diced (~2.5 cups)
  • 2 (9") refrigerated unbaked pie crusts (15 oz. package)
  • 3/4 lb. smoked ham, diced
  • 1 10 oz. package frozen chopped spinach, thawed & drained
  • 1.5 cups freshly grated Parmesan
  • 1 cup ricotta
  • 4 eggs + 1 yolk slightly beaten
  • 1/4 t. kosher salt
  • 1/4 t. pepper
  • 1 egg white, lightly beaten

Step 1

Preheat oven 425. Heat oil in large skillet over medium high heat. Add onion & sauté until translucent & just golden. Remove from heat, transfer to large bowl and cool.
Remove 1 crust from refrigerator and place in ungreased 9" pie plate. Shape crust to fit with 1/2 " overlap.
To onion mix add ham, spinach, cheeses, 4 eggs + 1 yolk, salt & pepper. Mix well. Spread into prepared crust. Cover with remaining crust, crimp edges and score to vent. Brush with egg white & bake until golden ~ 40-45 min. Let stand at least 15 min. and serve warm or room temp.
