Sweet Potatoes w/cinnamon maple butter sauce

Ingredients
- 2-4 sweet potatoes, scrubbed
- 1/2 cup melted butter
- 1/4 cup maple syrup
- 1 TBSP Flour
- 1 tsp cinnamon
- 1/4 tsp vanilla

Step 1
Scrub potatoes and cut off ends. Line a pan with foil and place potatoes on it. Bake potatoes in 400 degree oven for 1 hour (longer if they are large). (Internal temp should be 210 degrees.)
While the potatoes are cooking, combine butter, maple syrup, flour, cinnamon and vanilla. Whisk until smooth. Microwave for 1 minute, just till mixture begins to boil. Sauce will thicken as it cools. (I like to serve it warm.)
Once potatoes are done baking, remove skin and mash with a fork or potato masher. Sprinkle with a little coarse salt to enhance flavors.
Serve drizzled with Cinnamon Maple Butter Sauce and a dollop of whipped cream if you like.
Serve left over sauce on table so people can add more if they wish.
