Ingredients
- TOPPING
- 1/4 cup oats (quick cooking)
- 2 T packed brown sugar
- MUFFINS
- 1 1/2 cups oats (quick cooking)
- 1 cup all purpose flour
- 1/2 cup granulated sugar
- 1 T baking powder
- 1/2 tsp salt
- 1 cup skim milk
- 2 egg whites, slightly beaten
- 2 T vegetable oil
- 1 tsp grated lemon peel
- 1 tsp vanilla
- 1 cup fresh or frozen blueberries

Preparation
Step 1
1. Preheat oven to 400F.
2. Spray a 12 med muffin cup tray with non stick spray or line muffin cups with paper liners.
3. To prepare topping, combine the oats and brown sugar. Set aside.
4. To prepare muffins, combine all the dry ingredients in a large bowl and mix well.
5. In a small bowl combine the milk, egg white, oil, lemon peel and vanilla. Mix well.
6. Add to the dry ingredients, stir until moistened.
7. Gently stir in blueberries.
8. Fill the muffin cups almost full and sprinkle with topping.
9. Bake 20 mins.
10. Remove from oven and let cook on wire rack for 5 minutes.
