Cilantro Sauce

Ingredients

  • 1-2 bunches cilantro washed well and stems cut off
  • 1 teaspoon ground cumin
  • 3 cloves garlic (or more if you want it stronger)
  • 2-3 tablespoons apple cider vinegar*
  • 1/4 teaspoon sea salt or to taste
  • 1 cup good quality extra virgin olive oil
  • In Spain they use a light red wine vinegar instead.
  • Drizzle the cilantro sauce on boiled new potatoes but it can also be drizzled on salads, raw vegetables, steamed vegetables, brown rice, eggs, and fish.

Preparation

Step 1

Put all in ingredients in a blender on low speed. Blend on low until well blended. You can add more oil if it is too thick and adjust the salt to taste. Store it in a tightly sealed jar in the refrigerator, should last a few weeks. Enjoy!
