Chorizo Stuffed Shrimp

Ingredients

  • 1 1/2 pounds 21-25 count shrimp, peeled and de-veined
  • 7 ounces spicy Spanish chorizo
  • 1 tablespoon olive oil
  • fine sea salt and fresh ground pepper
  • bamboo skewers

Preparation

Step 1

1. Preheat oven to 400° F.

2. Slice the chorizo into ¼ – inch disks.

3. Wrap the shrimp around the chorizo and secure with a skewer.

4. Drizzle the olive oil over the shrimp and season with salt and pepper.

5. Bake for 7-9 minutes, until shrimp becomes opaque.
