Ingredients
- 2 cans chicken broth
- 1 pound chicken [3-4 boneless breast]
- 1 packet dry ranch dressing mix
- 1 packet taco seasoning
- 1 can black beans drained
- 1 can whole kernel corn drained
- 1 can kidney beans drained
- 1 can red beans drained
- 1 can mild rotel [hot if desired]
- Tortilla chips
- Shredded cheese
Preparation
Step 1
Cut chicken into bite size pieces and cook til brown. Combine all other ingredients [except cheese] in a pot, add chicken. Cover and simmer on low for about 30 minutes, stirring occasionally. Serve with tortilla chips and sprinkle with shredded cheese.
