Ingredients

  • Brown 1 1/2 lb. grd. beef
  • 2 bell peppers chopped (any color or mixed colors)
  • 1/2 large onion
  • salt and pepper
  • oil 2 cloves garlic
  • taco seasoning to taste
  • 1 large can crushed tomatoes
  • 2 roma tomatoes chopped
  • broth
  • 4 cups
  • mexican mix cheese
  • 18 corn tortillas
  • note may substitute ground turkey

Step 1

Add salt and pepper to taste to ground beef that's been cooked and drained.

Chop peppers, garlic, and onion. Saute in oil in pan.

divide vegetables into two fry pans. Add ground beef and some of the taco seasonings to one pan. Into other pan add crushed tomatoes, roma tomatoes, some taco seasoning, and broth to thin slighty.

Ladle some sauce into bottom of greased casseroled. Place 6 tortillas in sauce, top with beef, cheese, and a layer of sauce. Dip remaining tortillas in remaining sauce on at a time as you use them to make one more layer. You should have 2layers of meat 3layers of tortillas. Top with more cheese. Bake 350 degrees for 30 mins. until bubbly on top
