Ingredients
- 1-1/2 cups each: all-purpose flour, whole wheat flour
- 1/4 cup granulated sugar
- 1 tbsp baking powder
- 1 tsp each: baking soda, kosher salt
- 2 cups buttermilk, lightly shaken
- 1 large egg, lightly beaten
- 1/4 cup unsalted butter, melted
- 1/4 cup rolled oats
Preparation
Step 1
In medium mixing bowl, whisk together two flours, sugar, baking powder, baking soda and salt. Make well in centre.
In measuring cup, combine buttermilk and egg. Pour into well in flour mixture. Mix with rubber spatula just until moistened. Stir in butter. Mix with spatula, then by hand, until all ingredients are incorporated.
Transfer dough to greased baking sheet. Gently pat into 8-inch round. Using wet knife, cut deep cross into length and width of bread. Sprinkle with oats. Bake in preheated 325F oven 65 to 70 minutes or until toothpick inserted in centre of loaf comes out clean. Cool on wire rack. Wrap cooled bread, preferably in cotton bag. Makes 1 loaf.
