Ingredients
- 3 packs active dry yeast
- 1 tsp plus 1/3 cup sugar
- 3 cups all-purpose flour
- 1 egg
- 3 tbs plus 2 tsp margarine, melted
- 1 tsp rum extract
- Zest 1 lemon
- 1/4 tsp salt
- 1/2 cup strawberry jam
- 3 cup veg oil
- Powdered sugar
Preparation
Step 1
Stir together yeast and 3 tbs warm water and 1 tsp sugar. Allow to sit 10 min until foamy. In a large bowl blend 3 cup flour and remaining 1/3 cup sugar. In a med. Bowl whisk yeast mixture egg, melted butter, 2/3 cup water, rum extract, lemon zest and salt. Make a well in the center of the flour mixture and add yeast mixture. Mix until dough forms. Turn onto floured surface, knead for 5 min. until elastic. Form into a ball dust with flour and place in clean bowl Allow to rise until doubled about 1 – 1 1/2 hrs. Knead gently to deflate. Divide dough into two, roll each half into 16 in log. Cut each log into 12 pieces. Roll each piece into a ball and flatten. Place 1 scant tsp of jam in center, turn up sides to meet each other and reshape into a ball. Place balls on floured tray. Heat oil to 340* place 3 doughnuts in at a time. Fry for 2 min on each side until nicely brown, Place on paper towel Sprinkle with powdered sugar.
