Ingredients
- 1/4 cup chopped celery
- 1/4 cup chopped onion
- 2 Tablespoons butter
- 1/4 teaspoon thyme
- 1 can condensed vegetable soup
- 1 Tablespoon minced parsley
- 1/3 cup tomato juice or water
- 1 1/2 cups diced, cooked beef
- 2 cups seasoned mashed potatoes
Preparation
Step 1
Cook celery and onion in butter until tender.
Add soup, thyme, parsley, tomato juice and beef.
Pour into a 1 1/2 quart casserole dish. Bake at 350 degrees for 30-40 minutes. Remove from oven; spoon potatoes in a circle around the edge. Slip casserole under broiler until potatoes are golden brown. Serve
